Nothing short about these braised short ribs from the menu of a brand new American New cuisine restaurant in Silver Spring, DC’s city like the suburb. Large thick and the super tender piece of pork. So tender that it just melts in your mouth. Flavor-wise the meat could have used a bit more seasoning to match that great tenderness. I liked that there was no bone to work around, and you can enjoy the meaty goodness. Served with a sizable side of mashed potatoes and roasted brussels sprouts. Not a cheap dish with a high price of $19. The brussels sprouts were probably the second favorite thing after the short ribs.
